Easy Gluten-Free Peanut Butter & Chocolate Cookie Recipe

I’m officially a pastry chef.

One of the goals for my recipe blog this year was to practice my pastry skills.

This cookie recipe is simple, easy and everyone will love them!


Ingredients:

  • 2 cups (16oz) of peanut butter

  • 1 cup of dark brown sugar

  • 1/2 cup flaxseed meal

  • 2 eggs

  • 1 tsp of baking soda

  • 1/2 tsp of salt

  • 1.5 cups of chocolate chips

Directions:

  1. Preheat the oven or air fryer to 375. Line a baking sheet with parchment paper and set aside.

  2. Add the peanut butter, brown sugar, flaxseed meal, eggs, baking soda and salt in a large bowl and mix well. Next, gently fold in the chocolate chips.

  3. Chill the cookie dough for at least 15/20 minutes in the refrigerator.

  4. Scoop and roll the cookie dough into small balls and place evenly on the baking sheet.

  5. Bake the cookies for 10-11 minutes. Once they’re done - let the cookies cool down before serving!
