Green Goddess Salad Recipe

Happy New Year, Everyone!

This recipe has been floating around social media for months, so thank you TikTok…finally made the time to try it out. The dressing is healthy but most importantly, creamy AF and it makes you want to eat every bite! It’s so delicious, you don’t even realize you’re eating something that’s actually good for you…just make sure you don’t over-do it with the chips…or go overboard, whatever your heart desires.


You can eat this salad with crackers, in a tortilla, on bread or by itself!

I used blue corn tortilla chips from Trader Joe’s with spicy chopped avocado on the side.

If you’re feeling fancy, try this recipe for an extra topping:

  • half purple onion - chopped

  • 1/2 cup finely chopped parsley

  • 1 tbsp dry white wine

  • pinch of salt

  • 1/2 lemon juice

    Mix all ingredients together in a small bowl and set aside until you’re ready for a party in your mouth.

This is my version of “pickled onions” hold the vinegar…hence the white wine. I’ve never acquired a taste for anything pickled or vinegar flavor.

To tell you the truth…the flavor is better the next day the ingredients had time marinate overnight.

Salad Ingredients:

  • 1 small head green cabbage (or iceberg lettuce), finely diced

  • 3-4 cucumbers, finely diced

  • 1/4 cup chives, finely diced

  • 1 bundle green onion or scallions

Green Goddess Salad Dressing Ingredients:

  • juice of 2 lemons

  • 1/4 cup olive oil

  • 2 tablespoons rice vinegar

  • 2 cloves garlic

  • 1 small shallot

  • 1/3 cup chives (optional)

  • 1/4 cup walnuts, cashews or nut of choice

  • 1 cup fresh torn basil leaves

  • 1 cup fresh spinach

  • 1/3 cup nutritional yeast

  • 1 teaspoon salt

Directions:

  1. Place all salad ingredients in a big bowl.

  2. Add all liquid dressing ingredients to a blender, then add the dry dressing ingredients and blend until smooth.

  3. Pour dressing over salad and mix well. Serve and enjoy!
